Pumpkin Spice Pancakes Recipe – Gluten Free
These Pumpkin Spice Pancakes are a fabulous fall breakfast treat and as a bonus they are gluten-free as we’ve made them with almond flour. You can top them with whipped cream, your favourite fruits and/or our salted caramel sauce. It’s all delicious or just enjoy with some maple syrup, it’s up to you.

If you’ve got a lot of mouths to feed at breakfast, don’t sweat it this pumpkin spice pancake recipe is easily doubled. If you’ve made any pancakes before you know that when the batter sits for a bit it starts to thicken. I like this for fluffier pancakes but sometimes it gets too thick, it’s an easy fix though just add a bit more milk to your desired consistency and you’re good to go.
Can you freeze this pumpkin spice pancake recipe?
Heck yes you can! You can store these gluten free pumpkin spice pancakes in an airtight container in the fridge for about 4 days and freeze them for about 3 months. I purposely double the batch even though there’s just 3 of us so that we can have them for a few days for a quick breakfast and freeze the rest. They have yet to last 3 months before we eat them though but in theory you can freeze for 3 months.

Pumpkin Spice Pancakes
These Pumpkin Spice Pancakes are a fabulous fall breakfast treat and as a bonus they are gluten-free as we've made them with almond flour. You can top them with whipped cream, your favourite fruits and/or our salted caramel sauce.
Ingredients
- 3 large eggs
- 1/3 cup pumpkin paste or puree
- ¼ cup milk (regular or almond milk)
- 1 teaspoon pure vanilla extract
- 1 tablespoon honey
- 1 cup almond flour
- ½ teaspoon pumpkin spice
- 1 teaspoon cinnamon powder
- 1 teaspoon baking powder
- 1 tablespoon butter
Instructions
- In a bowl whisk eggs, then add milk, pumpkin puree, vanilla
extract, and honey, and mix everything. - Next add in almond flour, pumpkin spice, cinnamon, and baking
powder and mix until everything is combined. - Heat a skillet to medium heat and grease it with butter,
spoon ¼ cup of batter onto the skillet, and gently spread the batter into a 4-inch circle. - Cook for 2-3 minutes on both sides, or until it’s golden brown.
- Serve hot with toppings of your choice and enjoy.
